2015 minimalist cabernet sauvignon

Paumanok has released its newest label, the 2015 minimalist cabernet sauvignon. As the name implies, this wine was made using minimalist winemaking techniques with fruit coming from a select harvest of cabernet sauvignon clusters. It spent over two months fermenting and macerating in contact with the skins. It was then aged for 17 months in 50% neutral French oak barrels and 50% stainless steel barrels. Nothing whatsoever was added to this wine, not even sulfites. It is the first wine Paumanok has produced without the addition of sulfites. It is a delicious wine. It is medium-bodied with a savory twist on the classic black currant, cedar and tobacco character of cabernet sauvignon. Only 104 cases were bottled.

A limited number of 1.5 L magnums are available at $105 a bottle. The 750 ml bottles are sealed with a screw cap, the magnums are sealed with a cork.

30th Anniversary Special Edition

2013 marks Paumanok's 30th Anniversary. To celebrate the occasion, only the best lots from the historic 2010 vintage were chosen for this special cuvee. It is a blend of 70% Merlot, 20% Cabernet Franc, 7% Cabernet Sauvignon and 3% Petit Verdot. Only 544 bottles were produced. Each bottle is individually numbered.

The 2010 30th Anniversary Special Edition...A ringer for Right Bank Bordeaux, this is quite clearly a winner...pretty fine, wonderfully elegant, impeccably balanced and remarkably complex at its young age (there is that advantage to blends). The backbone is real here, but fairly well controlled. It is rather delicious in a nuanced way, too. It is never sweet and jammy. The sappy fruit is pure, but amply supported by the structure. The wine is lively as well as ripe. It is a beautiful performance overall, with a certain sense of refinement, understatement and gracefulness. 2014 Blanc de Blancs

The 2014 Blanc de Blancs is an unoaked Chardonnay disgorged on Sept. 25, 2018, after some 39 months on the lees. It comes in dry, with five grams of residual sugar, and has 12% alcohol. Tasted about two months after disgorgement, this was invigorating and steely with a stonewashed nuance on the finish. Gripping and juicy on the finish, this is a knife's edge at times, seeming more intense than the 2013 and less fruity. They will each have their fans, although not always the same fans. I liked them both a lot, but if anything, I like this a little more. Granting that they are not both here together, this 2014 excels more in complexity and tension, but it has respectable depth as well. New York sparklers are good stuff, and Paumanok is one of their consistent stars. This looks like one of my favorites so far, but it will be interesting to see how this compares to the 2013 in a few years. Let's call them different but more or less equal for the moment. There's usually no wrong answer with Paumanok's bubbly. This should age pretty well, but take that in stages. 92 points

The 2013 Blanc de Blancs is an unoaked and dry Chardonnay that comes in at 12.5% alcohol. It was disgorged Oct. 17, 2017, after some 36 months on the lees. The last Blanc de Blancs I liked this much was the 2011 - but for very different reasons in a very different vintage. The 2011 year was a bit of a mess on Long Island, but for a sparkler, picked for acidity rather than concentration, it could work. That 2011 did have a fast-aging, oxidative nuance, but I rather liked it a lot anyway. This is its polar opposite, but it makes no compromise in its very different (and more typical) style.

Lush, round and concentrated on opening, this simply fills the mouth with fruit on first taste. It is fair to say that this will be in prime time long after the 2011 has faded - and it won't just be for the geek crowd. The 2013 year, unlike 2011, was a big vintage on Long Island, and lots of wines show big fruit. Once past the first hit of fruit, though, you finally get the acidity lurking underneath and tension on the finish. The acidity here is not as immediately noticeable as it is on the 2011 because this 2013 has so much more fruit. But it is there, and as this warms and airs, it makes its presence known. The next day, in fact, it preened in its good acidity, the perceptible balance having changed dramatically. This will hold well, I suspect, and it will show more character to go with its plump demeanor with a little cellar time. In the meanwhile, noting that this was only disgorged for a bit less than a month before tasting, it still seems worth leaning up for its potential. 92 points

2013 minimalist chardonnay

This wine was produced using minimalist winemaking techniques. The fruit came from our vineyard in Aquebogue, planted in 1983. Select clusters of unblemished Chardonnay that had attained total ripeness were carefully hand harvested and whole cluster pressed. The juice was transferred into new French oak puncheons where alcoholic and malolactic fermentations spontaneously occurred. Nothing other than a judicious amount of sulfites was added. It was bottled unfined and unfiltered. A natural sediment may form in the bottle over time.

The 2013 Minimalist Chardonnay was aged for 12 months in new French oak and comes in at 13.5% alcohol...Beautifully focused, this graceful Chardonnay has the most oak impact on paper of the three Chardonnays submitted by the winery this issue, but it also handles it very well, even at this young age. It's there, but it certainly isn't overbearing. The texture is caressing. It feels fuller in the mouth than its elegant mid-palate would suggest. Precise and reasonably penetrating on the finish, it is also beautifully balanced. It then adds a couple of layers of concentration to the Festival Chardonnay also reviewed this issue. The first time I had this it didn't show as well. With a little extra time for aeration, it proved far more interesting on a second taste. Did I mention that it is pretty delicious, too? This Sauvignon Blanc was fermented with indigenous yeast. It offers a lush combination of herbaceous and citrus fruit aromas and a dry, crisp, medium body, texturized by a super slim tannin profile owing to 18 hours of whole cluster skin contact prior to fermentation in a stainless steel tank.

The 2015 Sauvignon Blanc "Minimalist" is unoaked, dry and comes in at 12.5% alcohol. As we saw with the "Minimalist" Chenin Blanc reviewed this issue, this bottling emphasizes its fruit--ripe, luscious and (oh, yes!) remarkably tasty. That said, it achieves that at the expense of subduing a lot of Sauvignon Blanc character--the aromatics are a bit muted. Instead, this underlines "sexy." Admittedly, it executes that extremely well. I'm sure many are going to just flip for this. Underneath, there is just enough tension to make me think this might hold well, but it isn't a wine that is filled with energy and verve. It will be interesting to see where it goes. It has such a "come hither" feel now, though, that I suspect that no one is going to be keeping it too long. 90 points.

2016 minimalist chenin blanc

A special, select hand harvest of only the most pristine clusters from our oldest Chenin Blanc vineyard, planted in 1982, was performed to obtain the grapes used to make this wine. The fruit was pressed whole cluster. The juice was transferred to stainless steel barrels in which alcoholic fermentation spontaneously occurred. Other than a minimal amount of sulfites, nothing was added to the wine. It remained in steel barrels for 7 months prior to bottling. It is sealed with a screw cap to preserve freshness and cleanliness.

2014 Chardonnay Grand Vintage

This is the sixth time that PAUMANOK releases a Grand Vintage Chardonnay. This wine is made from the free run juice from the ripest two batches of clean fruit that we harvested. It was entirely barrel fermented, primarily in new French oak barrels. It yielded a wine of great purity and intensity, deserving the Grand Vintage designation.

Offers aromas of yellow apple, lemon zest, toast, yeast and butterscotch and subtle floral notes. On the palate it is dry with flavors of toast, apple, pear and lemon. Pair it with white fish and poultry dishes. While it drinks well now, it well benefit from cellaring. Only 83 cases were bottled.

"The 2014 Chardonnay Grand Vintage is a level where, with many wineries, I might say that the finesse and understatement shown elsewhere (with the Festival and the Barrel Fermented) ends. In fact, this is beautifully balanced. In the grand scheme of things, the extra oak treatment here is modest: 50% of the juice in second use French oak and the other half in neutral French oak for eight months. While the oak impact is a bit more obvious here, this is still quite graceful. It always seems rather fresh and clean for an oaked Chard. This impeccably constructed white has fine fruit and a lingering, very tasty finish. With air, the wine fleshes out a bit and it acquires a bit more pop on the finish, together with a more velvety texture. There were times when it seemed a bit too understated for the level. Whether it is worth the uptick in price--that's up to you, your wallet and your stylistic preferences. It is the best wine of the three Chards, though." 90 points. The 2014 Cabernet Franc Grand Vintage was aged for 17 months in neutral French oak. It comes in at 13.5% alcohol. Burly, very tight and showing far better structure than fruit, this emphasizes its acidity and backbone, but doesn't show a lot of flesh, flavor or character. Not to be released until July, this certainly needs some time to settle down and integrate its components. It will likely be better, in fact, in 2019. A bit charmless just now, given its dusty finish and subdued fruit, this still has considerable potential given its impressive structure. It should come around well. Keep your hands off of it for a few years if you can. It is all about the potential now, but it seems to have plenty.

The 2013 Merlot Grand Vintage was aged for 15 months in French oak (only 30% new, the rest neutral). If you wonder what you get by trading up from the regular Merlot reviewed this issue, start with the lusher, more concentrated feel. It is also better balanced. The fruit doesn't fade as quickly and counters its tannins well. Sappy and fresh, this is a surprisingly sexy young Merlot with gorgeous fruit and a very graceful demeanor on opening. Yet, as I played with this at home, it kept getting better, more serious, more structured and more interesting over a couple of hours. For all of its early sex appeal, it is a wine with some understatement; it never once seemed bombastic or obvious. Yet, it always remained fresh, gripping and full of flavor. I liked it more and more as time went on. It seemed surprisingly approachable on opening, but note also that it became far more intense and interesting some two hours later. Drink it now if you must, but it will become more complex and interesting with time. If you have some patience and a cellar, come back in three to five years, perhaps. We'll see where we are then.

Made from a single block on Tuthills Lane planted in 1986. The 2010 vintage is only the second time Paumanok has produced this label, and it is one of the finest reds our estate has produced. It offers intense aromas of crushed blackberries, plum, fig and luxuriously sweet vanilla. It is a complex, full bodied red with rich, voluminous tannins and multi layered flavors of black fruits, earth and sweet spice. 188 cases were bottled.

The 2010 Merlot Tuthills Lane was aged in 55% new French oak and 45% neutral French oak and comes in at 13.9% alcohol. The first taste and first thought summed this up "just gorgeous." Powerful, concentrated and focused, this gripping Merlot takes no prisoners in terms of structure, yet it is in perfect balance with the ripe fruit, too. The fruit is flavorful and nuanced, showing classic Bordeaux-like notes (although, in its youth, also a bit of oak). It is pretty delicious even now, but it will continue to improve in the cellar and it should have a long life ahead. It will acquire more complexity in time and pull in the last bits of oak. Retasted the next day, it was not quite the "wow" wine on first impression, having calmed down, but it showed more complexity and refinement, was more Bordeaux-like than ever and seemed even fresher. While you most certainly can drink it now, it will just as certainly be better in five years or so. It should hold beautifully. It not yet even at peak.

It comes in at 13.5% alcohol. This is another big 2014 from Paumanok in terms of power. The oak shows a bit just now, but not so much the fruit. It is, like most of the winery's 2014s, crisp and a bit hard-edged, with a tight feel just now. It is very much about the potential just now, but it seems to have plenty. It is simply dripping with it, even if somewhat closed.

The 2014 Cabernet Sauvignon Tuthills Lane Vineyard was aged for 17 months in 33% new French oak (the rest neutral). It comes in at 13.9% alcohol. This is a powerhouse.Tight, intense and a bit hard on the finish, this shows off some oak, but not a lot of fruit, flesh and flavor to go with the power. Still, I loved the silky feel of this, the caressing texture and the gorgeous, lingering finish. Every time I let it sit on the tongue, it seemed more impressive and proved that it wasn't just about the power.

This wine is 100% Petit Verdot, made from a single block on Apollo Drive. It marks the third time PAUMANOK has bottled a varietal Petit Verdot, and it is one of the finest reds our estate has produced. It was aged for 16 months in french oak, 33% new oak. Spicy with concentrated black fruit flavors and inky black in color, this full bodied wine possesses ample tannins that suggest it will cellar well for many years. Only 147 cases were made.

The 2013 Petit Verdot "Apollo Drive Vineyard - Limited Edition" was aged for 16 months in French oak (30% new, the rest neutral). It comes in at 13.9% alcohol. Like all of Paumanok's offerings this issue, this is most impressive for its balance, its feeling of "suave" and "elegant." Gorgeously constructed and not at all brooding, stern and impenetrable--the way all too many Petit Verdots turn out--this has fine structure, plenty of power on the finish and a tinge of oak in its youth. Yet, more than any one element, what stands out is its graceful mid-palate and its impeccable balance (a repeated theme with these offerings). 2012 Riesling Late Harvest

BEST LATE HARVEST WINE, NYW&FC 2013

This Riesling is a botrytis-affected wine, made from grapes with 'Nobel Rot'. It offers clean, bright aromas of peaches, apples, nectarines, flowers and honey. It has rich, honeyed texture with sweet and delicious flavors of apple, peach, apricot and grape. This wine has terrific acid balance, a persistent aftertaste and a crisp, nearly dry finish. Enjoy on it's own after a meal or try pairing it with fruit tarts and cheeses. Only 439 cases were made.

The 2012 Riesling Late Harvest comes in at 154 grams per liter of residual sugar and 9% alcohol. Now that you are in the land of late-harvest Riesling, this is where you'll start saying "Apricots, Peaches and Pineapple, oh my!" As rich as it sometimes seems, what actually makes this interesting rather than scary is the zest and acidity. It is most certainly sweet, but it doesn't seem anywhere near as sweet as statistics might suggest. It adds a bit of bite and tension as it airs on the lingering and completely delicious finish. That drier and fresher character was underscored emphatically the next day, when the sugar was just a bit more subdued, the flavors intense and the demeanor bright and sunny. This should satisfy lots of desires over the next few years (or, noting that these tend to age well, the next couple of decades or so.) We'll be conservative at the moment. The Sauvignon Blanc grapes from our original planting (planted in 1984) behind the winery were allowed to hang on the vine beyond their normal point of full ripeness to promote the development of botrytis, the “noble rot”. A slow, cool fermentation in new French and Hungarian oak barrels yielded intense and focused tropical fruit flavors like litchi, quince, pineapple, mango and guava. This wine is rich and sweet, and has ample acidity to balance the sugar, resulting in a sensational, full-bodied, dessert wine with a long finish. The oak embellishes the wine by imparting a subtle nutty flavor and by increasing complexity. A wonderful match with sharp cheeses like Roquefort or Stilton, or enjoy on its own after dinner. Only 412 cases were made.

WINNER BEST RED BLEND - NEW YORK WINE & FOOD CLASSIC 2011

The 2007 Assemblage is a blend of 69% Merlot, 22% Petit Verdot and 9% Cabernet Franc, aged in French oak (half new, half used). It comes in at 13.5% alcohol. Another example of this fine vintage at Paumanok (as well as on Long Island), this is tight and powerful, ending with some sharpness and a rough edge at the moment. Completely unevolved, this has gorgeous flavors, but its power makes it a bit hard to deal with. Put this in the cellar for another couple of years at least and I suspect it will not hit something like peak until around 2020. Eventually, it is going to come around because it has the mid-palate concentration to balance the power out and the fine intensity of flavor coming from ripe, fine fruit. It has some questions to answer in the cellar, but I'm leaning up on this beast for the moment.

The Massouds last bottled a Cabernet with the same site designation as their 2005 Cabernet Sauvignon Tuthills Lane in 1995. Charles Massoud says the berries were leaking color already at harvest here, something he has never before witnessed. Cassis and mulberry - backed by cedar - testify to the extreme ripeness of the crop. But there is no sense of cooked fruit, and instead one of invigorating freshness, reinforced by the tart chew of ripe fruit skins. Peat, iodine, and pungent herbs add to the aromatic intensity as well as the palate-staining finish on exhibit in this wine that emphasizes grip and grit over polish. Expect it to be worth following for another 6-8 years.

The 2010 vintage marks only the second time this wine has been produced since the original 1995 vintage was introduced. Made from a single block on Tuthills Lane. In 2010, it yielded some of the best Cabernet Sauvignon fruit that Paumanok has produced. It is rich, plush and dense with velvety tannins. It has a long finish, bright black fruit flavors, is full bodied and while attractive at bottling should develop well over time. It is one of the finest reds our estate has produced. Only 96 cases were bottled.

The 2010 Cabernet Sauvignon "Tuthills Lane Vineyard" also has 5% Merlot blended in. It was aged in 95% new French oak, the rest neutral; and comes in at 13.9% alcohol. In most places in the world, it is the Cabernet that is bigger, deeper and more powerful. On Long Island, that description usually goes to the Merlot when the two are paired. That said, this is a pretty intense wine, with a rather concentrated mid-palate, intense flavor and a fine finish. It could use a little more cellaring, but it may be surprisingly approachable, too. It continued to evolve beautifully with extended aeration. It should also hold well. Putting on my bargain hunter hat, I would have to add that the winery's 2010 Cabernet Grand Vintage, also reviewed this issue, is as good or better and not quite as pricey. Either or both may be entitled to upticks as they age, and I won't be surprised if there are differing opinions at differing points in their developments. They are differently styled, though, this being the more refined and elegant.

Representing their first-ever Merlot bottling with this site designation (and their original 1986 block), the Massoud's 2007 Merlot Tuthills Lane is unblended and was aged in largely new barriques. Its ripe cassis, dark cherry, and blueberry are accented with mint and cherry pit, iodine and bittersweet herbal and floral essences. This shows formidable concentration and ripeness yet exhilarating sheer refreshment and an uncanny sense of lift. It's only 13.5% alcohol, by the way. I would anticipate a dozen years' satisfaction, and probably not start popping corks for 3-4 years.

The 2007 Merlot Tuthill's Lane was the debut vintage, sourced from a block planted in 1986 and aged for 18 months in French oak (79% new; 21% one- and two-year-old French oak). It comes in at 13.5% alcohol. Paumanok picked a good year to start with this bottling, as 2007 was a very fine year in general. Here, it makes a wonderful Merlot. Full-bodied and caressing on the palate, this shows very fine depth, but it retains its elegance all the while. Nearing age 8, it remains young and vibrant, showing beautiful mid-palate solidity and impeccable freshness. It is just now giving hints of developing more complexity and it will continue to evolve in the cellar. Structured, balanced, fresh and intriguing, this is a beauty. Although this is a library wine, I am advised it is still available, both in 750ml and magnums.

Only produced in a "Grand Vintage", the 2010 Assemblage is a blend of 35% Merlot, 33% Cabernet Sauvignon, 21% Petit Verdot and 11% Cabernet Franc. Dense and round, with intense aromas of cassis, black berry, black cherry and spice. Medium to full-bodied, a firm tannin structure and a long finish. 445 cases were bottled.

Of 42 East End wines I sampled, the most accomplished red was Paumanok Vineyards’ very Bordeaux-like 2010 Assemblage ($50), a seamless mélange of merlot, cabernet sauvignon, petit verdot and cabernet franc that promises many years in top form.

The Paumanok 2005 Assemblage blends 34% Cabernet Sauvignon and 22% Petit Verdot into its base of Merlot. Tart blueberry and blackberry are tinged with mint and fennel. A finely concentrated, leanly-textured palate displays well-integrated bitterness; a sense of extract you imagine straining through your palate; and an adamantly dry finish. This should hold will for 5-7 more years, although it will always lean toward the austere side.

The 2013 Assemblage is a blend of 46% Cabernet Sauvignon, 36% Merlot and 18% Petit Verdot, about two-thirds of which was aged in new French oak; the rest in neutral oak. It comes in at 13.9% alcohol. Showing its oak a bit up front, this is still beautifully crafted with the same graceful and accessible feel as the winery's upper level Merlot and Cabernet this issue. Here, however, the grape blend does add a bit more complexity at the outset, once the oak blows off. It feels full in the mouth, but it doesn't quite have the personality of the pure Cabernet bottlings. The texture is also not, perhaps, quite as sensual, but it is still bursting with controlled flavors, a touch of herbs, a touch of cassis and a hint of vanilla--molding themselves into a more interesting whole. There's not much to argue about here. Which of the three upper level reds you like best will be a matter of taste--and when, in their evolution, you twist off the screwcap.

The 2013 Cabernet Sauvignon Tuthills Lane Vineyard was aged for 16 months in French oak (50% new, the remainder neutral). It comes in at 13.9% alcohol. Simply gorgeous, this has sensual texture and rich fruit--in a subtle way, if I can put it that way--and an impeccably balanced demeanor. Graceful, without a hair out of place, it is drinking fairly well now, at least after a couple of hours of air. It does tighten a bit on the finish. More importantly, it is unevolved in its primary fruit impression. It tastes great, missing just one thing: that complexity that only comes with age. It takes the regular Cabernet, adds texture and seems more serious and age-worthy. Overall, you could drink this today and it would still be amazing--but don't. I held it open for over two hours and it just kept getting better. As graceful and approachable as it seemed on opening, it never faded, thinned or retreated even a little bit. About five years in the cellar should help it a lot. At that point, a lot of the relatively few rough edges will be rounded off and it will start showing a little complexity.
